This dish is not only low in fat and high in protein but it is utterly delicious! It is also a bit spicy so be careful.
1 lb of chicken
3 tablespoons of butter
1 cup of creamy peanut butter
¼ cup of hot water
½ teaspoon of soy sauce
Crushed red pepper flakes
Let’s get started
- § Melt 3 tablespoons of butter into a medium sauce pan. While butter is melting cut chicken into chunks and season with Ginger, Salt, and Pepper.
- § Add chicken chunks into the melted butter and begin poaching chicken until chicken is just cooked through and set off to the side.
- § In a bowl take 1 cup of creamy peanut butter, ¼ hot cup of water, ½ teaspoon of soy sauce, Ginger, and Crushed red pepper flakes and whisk until sauce is smooth.
- § Pour sauce into the sauce pan with the chicken and stir until chicken is completely cooked through.
- § Serve over Rice.
